Ingredients
  

  • 2 large flour tortillas
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend
  • 1/2 cup cooked chicken beef, or veggies (optional)
  • 1 –2 tablespoons butter or olive oil
  • Salsa guacamole, or sour cream (for serving)

Instructions
 

  • Prep the tortillas and fillings: Lay out the tortillas on a clean surface. Sprinkle shredded cheese evenly over one half of each tortilla. Add any optional fillings like cooked chicken, beef, or sautéed vegetables, but avoid overfilling—they need room to fold.
  • The fold hack: Instead of a traditional half-fold or cutting into triangles, fold the tortilla in thirds accordion-style or into a compact “envelope” so the edges are sealed. This keeps all the cheese and fillings from spilling during air frying and ensures even melting. Press lightly to compact the layers.
  • Oil the tortilla: Brush or lightly spray both sides of the folded quesadilla with butter or olive oil. This helps it crisp up beautifully in the air fryer, giving a golden-brown, crunchy exterior.
  • Air fry for perfection: Preheat the air fryer to 375°F (190°C). Place the folded quesadilla in the basket, ensuring it’s flat and not overlapping with others. Cook for 6–8 minutes, flipping halfway through, until the outside is crisp and the cheese is fully melted.
  • Serve and enjoy: Remove carefully (it will be hot!). Let it cool for a minute or two so the cheese sets slightly, then slice into bite-sized pieces. Serve with salsa, guacamole, or sour cream for dipping. The fold hack ensures every bite is cheesy and perfectly contained—no mess, no leaks!
