Air Fryer Tomato and Egg Cups

Ingredients
  

  • 4 medium tomatoes
  • 4 large eggs
  • 1/4 cup shredded cheese cheddar, mozzarella, or your favorite
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1 teaspoon olive oil
  • Fresh herbs for garnish optional, e.g., parsley or chives

Instructions
 

  • Prepare the tomatoes: Wash the tomatoes and cut off the tops. Using a spoon, carefully scoop out the seeds and pulp to create a hollow cavity for the eggs. Brush the outside and inside of each tomato lightly with olive oil, then season the cavities with a pinch of salt and pepper. Set aside.
  • Preheat the air fryer: Preheat your air fryer to 350°F (175°C) for about 3–5 minutes. This ensures even cooking and prevents the eggs from sticking.
  • Fill the tomatoes: Crack one egg into each hollowed tomato, making sure the yolk stays intact. Sprinkle the top with shredded cheese and a little extra salt and pepper if desired. You can also add small toppings like diced bell peppers or spinach for extra flavor and color.
  • Cook the egg cups: Place the filled tomatoes carefully into the air fryer basket. Cook at 350°F (175°C) for 12–15 minutes, depending on how runny or firm you like your egg yolks. Keep an eye on them toward the end—eggs cook quickly and can overcook if left too long.
  • Serve and garnish: Using a spatula or tongs, carefully remove the hot tomato cups from the air fryer. Sprinkle fresh herbs on top for a pop of color and freshness. Serve immediately while warm. These egg cups are perfect as a healthy breakfast, brunch, or even a light snack.
