Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 2 –3 medium tomatoes sliced
  • 8 oz fresh mozzarella sliced
  • Fresh basil leaves
  • 2 tablespoons balsamic glaze for drizzling

Instructions
 

  • Preheat the oven to 400°F (200°C). Lightly grease a baking dish with a little olive oil or cooking spray.
  • Season the chicken: Place chicken breasts in the dish. Sprinkle salt, pepper, garlic powder, and Italian seasoning on both sides. Drizzle olive oil over them.
  • Bake the chicken for 20–22 minutes, or until the chicken is nearly cooked through (internal temp should reach about 160°F).
  • Top with tomato and mozzarella: Remove the chicken from the oven. Place 2 slices of tomato and 1–2 slices of mozzarella on top of each breast.
  • Bake again: Return the dish to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly, and the chicken reaches 165°F inside.
  • Add basil and glaze: Remove from the oven. Let rest 5 minutes. Add fresh basil leaves and drizzle balsamic glaze over the top.
  • Serve hot with rice, pasta, salad, or crusty bread. Enjoy!

Notes

Allow the chicken to rest for 5 minutes after baking to lock in juices.
