Blend the base: In a blender, combine the oats, milk, Greek yogurt, cocoa powder, maple syrup, almond butter, vanilla extract, and salt. Blend until the mixture is smooth and resembles a thick, chocolatey batter. Blending helps create that creamy “brownie batter” texture rather than the chunky consistency of typical overnight oats.
Adjust sweetness and texture: Taste the blended mixture and adjust as needed. If you prefer a sweeter flavor, add an extra drizzle of honey or maple syrup. If it seems too thick, splash in a little more milk and blend again. The mixture should be pourable but still thick and rich.
Add chocolate chips: Stir in mini chocolate chips by hand (do not blend them in unless you want them melted throughout). This gives the oats that brownie-like bite when chilled.
Transfer and chill: Pour the blended oats into jars or airtight containers. Cover and refrigerate for at least 4–6 hours, but ideally overnight. This chilling time allows the oats to soften and absorb the flavors, making them rich and pudding-like.
Serve and enjoy: The next morning, give the oats a quick stir. If the texture is too thick, you can loosen it with a splash of milk. Top with fresh banana slices, an extra sprinkle of chocolate chips, chopped walnuts, or a drizzle of nut butter to make them even more indulgent.
