Prepare the chicken: If your chicken is not cooked, season the chicken breasts with olive oil, garlic powder, salt, and black pepper. Heat a skillet over medium heat and cook the chicken for 6–7 minutes per side, until fully cooked and no longer pink in the center. Allow it to rest for 5 minutes, then slice or shred it into bite-sized pieces.
Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
Assemble the flatbread base: Place the flatbreads on the baking sheet. Brush lightly with olive oil to help crisp them in the oven. Sprinkle a thin layer of grated Parmesan over the flatbreads to create a flavorful base.
Add toppings: Evenly spread the cooked chicken over each flatbread. Drizzle Caesar dressing over the chicken, being careful not to over-saturate the flatbread, so it stays crisp. Add cherry tomato halves if using.
Bake: Place the flatbreads in the preheated oven for 8–10 minutes, or until the edges are golden brown and the cheese is lightly melted. Keep an eye on them to prevent burning, as flatbreads cook quickly.
Add fresh elements: Remove the flatbreads from the oven and immediately top with shredded Romaine lettuce for that fresh, crunchy Caesar salad texture. Sprinkle extra Parmesan or croutons over the top for added flavor and texture.
Serve: Slice the flatbreads into 2–3 pieces each and serve warm. The combination of crisp flatbread, tender chicken, creamy Caesar dressing, and fresh lettuce makes each bite flavorful and satisfying.
