Ingredients
  

  • 1 ½ lbs ground chicken
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup milk
  • 1 large egg
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

Optional Topping:

  • ¼ cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped parsley

Instructions
 

  • Prepare the mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, milk, egg, minced garlic, parsley, salt, pepper, and Italian seasoning. Use clean hands or a spoon to gently mix everything together until just combined, being careful not to overmix so the meatloaves stay tender and juicy.
  • Shape the meatloaves: Divide the mixture evenly into 4 portions and shape each into a small loaf or oval shape. Place them on a lightly greased or parchment-lined baking sheet, leaving a bit of space between each piece to ensure even cooking.
  • Prepare the topping: In a small bowl, mix the melted butter, garlic powder, grated Parmesan cheese, and chopped parsley. This mixture will add extra flavor and a golden finish to the meatloaves.
  • Bake the meatloaves: Preheat the oven to 375°F (190°C). Place the baking sheet in the oven and bake for 30–35 minutes, or until the meatloaves are fully cooked through and the internal temperature reaches 165°F (74°C). Halfway through baking, you can spoon a little of the melted topping mixture over each meatloaf to enhance flavor and moisture.
  • Add the finishing touch: In the last 5 minutes of baking, sprinkle or brush the remaining topping mixture over the meatloaves. Return them to the oven and allow the tops to become lightly golden and slightly crisp.
  • Rest and serve: Remove the meatloaves from the oven and let them rest for about 5 minutes before serving. This helps the juices settle and makes them easier to slice. Serve warm with your favorite sides such as mashed potatoes, roasted vegetables, or a fresh salad.
