Make the Dough (skip if using store-bought): In a large bowl, combine the flour, sugar, salt, and instant yeast. Add warm water and olive oil, stirring with a wooden spoon until the dough starts to come together. Transfer to a floured surface and knead for 5–7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let it rise for 45 minutes or until doubled in size.
Prepare the Garlic White Sauce: In a small saucepan, melt butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Sprinkle in the flour and whisk continuously for 1 minute to form a smooth roux. Gradually pour in the milk while whisking to avoid lumps. Continue cooking until the sauce thickens slightly, then stir in Parmesan cheese, salt, pepper, and Italian seasoning. Remove from heat once it reaches a creamy consistency.
Preheat the Oven: Set your oven to 475°F (245°C). If using a pizza stone, place it inside to preheat for a crispier crust.
Assemble the Pizza: Roll out the dough on a floured surface to your desired thickness (12-inch circle works best). Transfer it to a parchment-lined baking sheet or preheated stone. Spread the garlic white sauce evenly over the surface, leaving about 1 inch of crust uncovered around the edges. Sprinkle mozzarella cheese over the sauce, then add bacon, spinach, and red onion.
Bake the Pizza: Bake for 12–15 minutes or until the crust is golden and the cheese is melted and bubbly. Keep an eye on it—white sauce pizzas brown quickly because of the milk and cheese.
Finish and Serve: Once baked, remove from the oven and let it cool for 2–3 minutes. Sprinkle fresh parsley on top for color and freshness. Slice and serve warm, letting the creamy garlic aroma fill the room.
