- 1 lb ground beef or Italian sausage
- 1 small onion chopped
- 3 cloves garlic minced
- 4 cups chicken broth
- 2 cups water
- 1 14 oz can crushed tomatoes
- 1 14 oz can diced tomatoes
- 1 tablespoon tomato paste
- 1½ teaspoons Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1½ cups uncooked lasagna noodles broken into pieces
- 1 cup shredded mozzarella cheese
- ½ cup ricotta cheese
- ¼ cup grated Parmesan cheese
- Fresh basil or parsley for garnish optional
In a large pot, cook ground beef and chopped onion over medium heat until browned. Add garlic and cook for 1 more minute.
Stir in crushed tomatoes, diced tomatoes, tomato paste, chicken broth, water, Italian seasoning, salt, and pepper. Bring to a boil.
Add the broken lasagna noodles. Reduce heat and simmer for about 12–15 minutes, or until noodles are tender. Stir occasionally.
Once noodles are cooked, stir in a handful of mozzarella and Parmesan. Taste and adjust seasoning if needed.
Ladle soup into bowls. Add a spoonful of ricotta on top of each serving, sprinkle extra mozzarella, and garnish with fresh herbs if desired.
