  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup milk dairy or plant-based
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon optional
  • Butter or cooking spray for greasing waffle iron
  • Fresh fruit nuts, or syrup, for serving

Instructions
 

  • Prepare the batter: In a blender or food processor, combine rolled oats, cottage cheese, eggs, milk, honey, and vanilla extract. Blend until the mixture is smooth but still slightly textured. Add baking powder, salt, and cinnamon, and pulse briefly to incorporate. The batter should be thick but pourable; if too thick, add a little extra milk to reach the right consistency.
  • Preheat and grease waffle iron: Turn on your waffle iron and allow it to fully heat. Lightly brush or spray both the top and bottom plates with butter or cooking spray to prevent sticking and ensure crisp waffles.
  • Cook the waffles: Pour a portion of batter onto the center of the hot waffle iron (about 1/3 to 1/2 cup, depending on your waffle iron size). Close the lid gently and cook for 3–5 minutes, or until the waffle is golden brown and cooked through. Carefully remove with a spatula and keep warm on a plate while cooking the remaining batter.
  • Serve: Stack the waffles on a plate and top with fresh fruit, nuts, a drizzle of syrup, or a dollop of yogurt. For extra flavor and texture, you can sprinkle a little cinnamon or nutmeg over the top. Serve immediately for a warm, hearty breakfast that is both satisfying and nutritious.
