- 4 medium potatoes peeled and diced
- 1 small onion chopped
- 2 cloves garlic minced
- 3 cups chicken broth
- 1 cup milk or cream for richer soup
- 1 tablespoon butter
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup shredded cheddar cheese optional
- 3 slices cooked bacon crumbled (optional)
- 2 tablespoons chopped green onions optional
In a large pot, melt butter over medium heat. Add chopped onions and garlic and cook until soft, about 3–4 minutes.
Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
For a creamier soup, use an immersion blender to puree part of the soup. You can also mash some potatoes with a fork.
Stir in milk, salt, and pepper. Simmer 5 more minutes. Taste and adjust seasoning if needed.
Ladle soup into bowls and top with shredded cheese, crumbled bacon, and green onions if you like. Serve warm with bread or crackers.
