Ingredients
  

  • 1.5 lbs beef tips sirloin or stew meat works well
  • 2 tablespoons olive oil
  • 1 large onion thinly sliced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt or to taste
  • 2 tablespoons all-purpose flour
  • 1/2 cup sour cream optional, for creamier sauce
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the beef: Pat the beef tips dry with a paper towel. This helps them sear better and develop more flavor. Season lightly with salt, pepper, and smoked paprika.
  • Sear the beef: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the beef tips in batches, being careful not to overcrowd the pan. Sear each piece for 2–3 minutes per side until nicely browned. Remove the beef and set aside.
  • Cook the onions and garlic: In the same skillet, reduce heat to medium. Add the sliced onions and cook for 5–6 minutes, stirring occasionally, until they become soft and slightly caramelized. Add the garlic and cook for an additional 1 minute until fragrant.
  • Deglaze the pan: Sprinkle the flour over the onions and garlic, stirring well to combine. Slowly pour in the beef broth while scraping up the browned bits from the bottom of the pan—these add rich flavor to your sauce.
  • Simmer the beef: Return the seared beef tips to the skillet. Add Worcestershire sauce and stir gently. Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until the beef is tender and the sauce has thickened slightly.
  • Finish the sauce: For a creamier texture, stir in the sour cream just before serving, and let it heat through for 2–3 minutes. Taste and adjust seasoning if needed.
  • Serve: Spoon the smothered beef tips over mashed potatoes, rice, or egg noodles. Garnish with fresh chopped parsley and a few caramelized onions for extra flavor. Serve hot for a comforting, hearty meal.
