  • 1 box yellow cake mix plus ingredients listed on the box
  • 1 package 8 oz cream cheese, softened
  • 1/2 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package 16 oz frozen strawberries, thawed and chopped, plus 1/4 cup strawberry juice
  • 1 container 8 oz whipped topping (like Cool Whip), thawed
  • 1/2 cup mini chocolate chips or chocolate chunks optional
  • Extra strawberries for garnish

  • Prepare the cake batter: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan. In a large bowl, prepare the yellow cake mix according to the package directions. Pour the batter evenly into the prepared pan and spread it smoothly with a spatula.
  • Create the cream cheese layer: In a separate mixing bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the chopped strawberries and 1/4 cup of strawberry juice, making sure the mixture stays slightly chunky for that “earthquake” effect.
  • Assemble the cake: Using a spoon or small ice cream scoop, dollop the strawberry cream cheese mixture evenly over the cake batter. With a knife or spatula, lightly swirl the layers together to create a marbled, cracked look — this gives the cake its signature “earthquake” appearance. Avoid over-mixing; you want distinct swirls of cream cheese and strawberry throughout.
  • Bake the cake: Place the pan in the preheated oven and bake for 40–45 minutes, or until a toothpick inserted near the center comes out mostly clean (a few crumbs are okay due to the strawberry cream cheese layer). The top should be lightly golden and slightly cracked. Remove from the oven and allow the cake to cool completely in the pan on a wire rack.
  • Add the finishing touch: Once cooled, spread the whipped topping evenly over the entire cake. Sprinkle mini chocolate chips or chunks over the top, if desired, and garnish with fresh strawberries for a colorful, eye-catching presentation. Chill the cake for at least 30 minutes before slicing to allow layers to set and flavors to meld.
