Turkey and Avocado Sandwich

Ingredients
  

  • 4 slices whole-grain or sourdough bread
  • 6 –8 slices deli turkey breast
  • 1 ripe avocado
  • 1 small tomato thinly sliced
  • 1/4 cup shredded lettuce or baby greens
  • 2 teaspoons mayonnaise or Greek yogurt
  • 1 teaspoon Dijon mustard optional
  • Salt and black pepper to taste
  • 1 teaspoon lemon juice to keep avocado fresh

Instructions
 

  • Prepare the avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash lightly with a fork until creamy but still slightly chunky. Stir in the lemon juice and a pinch of salt and black pepper to enhance the flavor and prevent browning.
  • Toast the bread (optional): Lightly toast your slices of bread if you prefer a warm, slightly crunchy texture. This step also helps the bread hold up better against the moist ingredients.
  • Spread the condiments: On one side of each slice of bread, spread a thin layer of mayonnaise or Greek yogurt. If using Dijon mustard, add a small layer on top of the mayo for a subtle tang.
  • Assemble the sandwich: Layer 3–4 slices of turkey breast on two slices of bread. Add the mashed avocado evenly over the turkey, then layer the tomato slices and shredded lettuce on top. Sprinkle a little extra salt and pepper over the veggies if desired.
  • Top and finish: Place the remaining slices of bread on top to complete the sandwich. Press down lightly to hold everything together. Slice each sandwich diagonally for a classic presentation and easier handling.
  • Serve: Serve immediately with a side of fresh fruit, pickles, or a small handful of chips for a simple, satisfying lunch. You can also wrap in parchment or wax paper for an easy on-the-go option.
