  • 4 cups peeled and chopped ripe peaches about 6 large peaches
  • 2 cups granulated sugar
  • 2 tablespoons lemon juice fresh or bottled
  • 1 teaspoon vanilla extract optional
  • ½ teaspoon ground cinnamon optional

Instructions

  • Peel and chop the peaches into small pieces. You can blanch them for 30 seconds in boiling water to peel them easily, then drop into ice water.
  • In a large saucepan, combine peaches, sugar, and lemon juice. Stir well and bring to a boil over medium-high heat.
  • Reduce heat to medium. Stir often and simmer for 30–35 minutes, or until thickened. You can mash the peaches a bit or leave it chunky.
  • Dip a spoon in the jam and place it on a cold plate—if it wrinkles slightly when pushed, it's ready. If not, cook a few more minutes.
  • Stir in vanilla extract and cinnamon for extra warmth and sweetness. (Add flavor (optional)
  • Pour hot jam into clean jars. Let it cool, then cover with lids.
