Cuisine American
- 4 cups peeled and chopped ripe peaches about 6 large peaches
- 2 cups granulated sugar
- 2 tablespoons lemon juice fresh or bottled
- 1 teaspoon vanilla extract optional
- ½ teaspoon ground cinnamon optional
Peel and chop the peaches into small pieces. You can blanch them for 30 seconds in boiling water to peel them easily, then drop into ice water.
In a large saucepan, combine peaches, sugar, and lemon juice. Stir well and bring to a boil over medium-high heat.
Reduce heat to medium. Stir often and simmer for 30–35 minutes, or until thickened. You can mash the peaches a bit or leave it chunky.
Dip a spoon in the jam and place it on a cold plate—if it wrinkles slightly when pushed, it's ready. If not, cook a few more minutes.
Stir in vanilla extract and cinnamon for extra warmth and sweetness. (Add flavor (optional)
Pour hot jam into clean jars. Let it cool, then cover with lids.
