Grilled Nectarine and Chicken Skewers

These colorful skewers are perfect for summer grilling and so much fun to eat! The sweet nectarines caramelize on the grill and pair beautifully with tender, juicy chicken. They look gorgeous on the plate with all those bright colors, and the flavors are amazing together. Kids love eating food on sticks, and adults love how easy these are to make for a crowd – it’s a win-win for everyone!

Time: 30 minutes + 30 minutes marinating | Serves: 4

Ingredients

  • 1 1/2 pounds boneless chicken breast, cubed
  • 3 firm nectarines, cut into chunks
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill. Cut chicken into 1-inch cubes for even cooking.
  2. Make the marinade by whisking together olive oil, honey, soy sauce, lime juice, minced garlic, grated ginger, salt, and pepper in a large bowl.
  3. Add cubed chicken to the marinade and let it sit for at least 30 minutes in the refrigerator. This gives the chicken time to absorb all those delicious flavors.
  4. Preheat your grill to medium-high heat. Thread marinated chicken and nectarine chunks alternately onto the soaked skewers, leaving small spaces between pieces.
  5. Grill skewers for 12-15 minutes, turning every 3-4 minutes and brushing with remaining marinade, until chicken is cooked through and nectarines are caramelized.
  6. Let skewers rest for 5 minutes before serving. The chicken should be juicy, and the nectarines should be sweet and slightly charred – delicious!
